A Korean traditional side dish of green leafy vegetables often combined with spicy sauce. Ingredients include cabbage, pepper, onion and garlic. It can be either spicy or non-spicy and it includes fermented cabbage, radish, fish sauce, red chili peppers, clove, shallot, carrot and gingko. In this recipe, we decided to use the spicy version to go with our Slow Cooker Korean Chicken. The sauce includes sesame oil, scallions, red and green chili peppers, garlic, light soy sauce and sesame seeds. The side dish is prepared with chicken, cabbage, garlic and ginger and then served with rice and Korean bibimbap.
Update: We both had the best versions of this dish last night. I'm thinking that you didn't follow the recipe, as the sauce seems to be something that I have not encountered before. I'm not sure if it was the spiciness or the amount of lemongrass, but I thought it was tasty. Maybe you can offer some suggestions for how to make it better for those who have not found it as delicious as I have. I was a bit disappointed that the flavor of the greens was not strong enough, and I thought the sauce might be a tad bit acidic. I am not sure if you meant to add vinegar or lemon juice, but I believe that it would definitely enhance the flavor. I don't think that you could add too much of it, but you could just use a different type of vinegar or lemon juice to make it slightly more acidic. I did notice the texture seemed a bit denser than normal. I guess that might be why I think the flavor was a bit weaker and was not as spicy as I thought it would be. I think the spiciness is a bit of a balancing act. I think that I could definitely have used more than one chili-garlic sauce. I think that it would have been quite good if you did not use the second hot sauce and just used the ginger-garlic sauce. One of the things that I loved about this dish was how aromatic it was. The ginger-garlic sauce was an excellent compliment and I would definitely recommend it if you want to try this dish again.
I do get the same reaction from Chinese people as you do from Chinese-Americans. You're right, though--it really is only the people from the US who enjoy the really sweet-as-crap lemon chicken. (I had to eat at least two pieces of that sweet-as-crap chicken in my life, though, because my Taiwanese mother would always order it for me.)
